Everyone has their game-day snack, and this one is mine. During the summer these are amazing on the Traeger, but winter in Idaho doesn't always cooperate so this is my alternate - all you need is an oven.
You can use whatever your favorite bbq sauce is, but if you're looking to try something new, check mine out! It's my personal fave, but perhaps I'm biased (definitely).
BBQ Pork Belly Bites
Tender, delicious, and a perfect bite to add to your game-day lineup.
- 2 lbs pork belly cubed
- 3 cups chicken stock
- 1 tbsp salt
- 1 tbsp black pepper
- 1 1/2 cups bbq sauce
- green onion sliced
- cilantro chopped
- red pepper flake optional
Preheat oven to 300. In a pot, combine the pork, stock, salt and pepper. Cover and bake for 3 hours.
Drain off any remaining cooking liquid and reserve for another use another day (it's really delicious stuff). Add the barbecue sauce to the pot and put back in the oven at 400 for 20 minutes, and 350 for another 20. Open every ten minutes and gently toss around. If the bbq sauce becomes too concentrated, add a couple tbsp of water.
Top with green onion, cilantro and red pepper flake - enjoy!
