Our kitchen is officially in working order! We're waiting on a few appliances and some paint and finishes, but Chris has been cooking up a storm. And I've been — well, heating things up when he's not around :) I'm famously *not* the resident chef in our house, and I have a lot of dietary restrictions, so when it's time to eat – it generally involves a lot of prep work, padded with pre-made options from my go-tos, like Daily Harvest.

The other night, Chris had a meeting, and I bee-lined for the freezer, eager to try the Chickpea + Coconut Curry. I was blown away! It tasted like five-star delivery or takeout — but better. It was so savory and deliciously, spiced with lots of warm flavor and a rich cashew butter base. I gobbled down the entire crock in one sitting without looking at my phone once (and you know that's saying something).
All of the Harvest Bakes have a great elevated, homemade flavor, they're packed with tons of veggies, and they come in larger portions — perfect for dinner for one or a side for the whole family. Each Bake is plant-based and packaged ready to pop in the oven. In just 20 minutes of baking, we get the flavors of a homemade meal, without actually having to lift a finger. I love stocking the freezer with these because not only are they really GOOD for me and delicious, (with four different globally-inspired flavors), but they're ready way faster than DoorDash can get here. (I styled this delicious dinner in one of our casserole dishes for one, but each Bake comes in its own zero-mess recyclable packaging.)
I've never been big on calorie counting. Instead, I count how much fiber and protein is in all of my meals. I love that Harvest Bakes pack a lot more of what I need. Overall, Daily Harvest makes it really easy to eat more fruits and vegetables every day. Also, I have Hashimoto's, so dairy and gluten are off limits for me. There are four Harvest Bakes (Cremini + Smoked Paprika Ropa Vieja, Chickpea + Coconut Curry, Gigante Bean + Artichoke Olio, and Squash + Wild Rice Gratin), and they're all plant-based, gluten-free, and dairy-free.
While the Harvest Bakes were designed for dinnertime, I've been caught eating them at all hours of the day. I'm also newly obsessed with the Flatbreads as an afternoon snack. I even served the Kale + Sweet Potato (pictured above) one as a "fancy" appetizer at one of our team meetings. I love that the crust on this one is actually a sweet potato and all of their Flatbreads have veggie crusts, too. It's completely delicious and completely good for you.
It's completely possible for me to map out an entire day's menu with Daily Harvest. Just for fun:
Breakfast: Carrot + Cinnamon Smoothie — It tastes like pie, and I honestly wake up thinking about it.
Lunch: Cauliflower Rice + Pesto Harvest Bowl — This is what I imagine having for lunch in Italy :) I'm transported to a corner cafe, and my brain thinks I'm eating risotto.
Afternoon snack: Pear + Arugula Flatbread — I can't get enough of the sweet potato crust!
Dinner: Squash + Wild Rice Gratin — There's a parsnip sauce that tastes like comforting autumnal gravy. It's better than therapy.
Dessert: Hazelnut + Chocolate Bites — These are like little protein cookies, and I've also been known to sneak them after the gym. But the girls think they're dessert, so shh!
Nightly Snack: Strawberry + Rich, Rippled Berry Compote Scoops — On the nights I can stay up late enough to watch Survivor, you'll find me in bed with my "ice cream."

I would like to try the bowls, flatbreads, meals but like most things processed most contain much too much sodium and are detrimental to anyone who needs to watch their salt intake. Really wish someone would come up with meals that are tasty easy and don’t make you sick or add to your heart or blood pressure problems. But they do give good ideas of meals for ingredients to make homemade meals. Maybe they could work on a lower sodium line that tastes good.

Oh, these sound so good - as someone who hates cooking and has loads of dietary restrictions I really struggle to find quick, easy and healthy pre-prepared meals - now if only they were available in Belgium 😭 Bon apetite, please have an extra serving for me!
