Elote-Inspired Grilled Corn Salad

Ingredients

  • 3 ears corn, grilled, husk removed, cut from the cob and cob discarded.

For the Dressing

  • 1/3 cup mayonaise
  • 1 lime, zested and juiced
  • 1-2 tsp honey
  • 1/2 cup cilantro, finely chopped
  • 2-3 tsp Tajin seasoning
  • 2-3 tbsp cotija cheese, crumbled

Instructions

  • Combine all the dressing ingredients together in a bowl.
  • Once the corn is finished cooking, add it to the bowl and stir to combine.
  • Serve at room temperature.

Notes

  • Great as a topping or a side dish.
