Grilled Fish Tacos

Ingredients

  • 1 1/2 lbs white fish, like cod or halibut

For the spice mix

  • 1 tsp Overachiever seasoning (or a seasoning blend you like)
  • 1/4 tsp ground cumin
  • 1/4 tsp ground smoked paprika
  • 1/4 tsp dried oregano

For the guacamole

For the slaw

  • 4 ears corn, shucked, grilled, kernels cut from cob
  • 1/2 cup sliced red onion
  • 1/4 cup small diced pineapple
  • 1-2 tbsp sliced jalapeno
  • 1 cup shredded cabbage
  • 1 lime, juiced
  • 1 green onion, sliced
  • 1 handul cilantro, chopped
  • 1 tsp Overachiever seasoning

Other

  • tortillas of choice, charred on the grill

Instructions

  • Heat grill on high with a grill basket on direct heat. Spray the fish with avocado oil spray and season with the seasoning blend listed above. Grill on direct heat until charred and cooked through.
  • Grill tortillas and prep each taco by spreading desired amount of guacamole on each, followed by some of the fish, then the slaw. Enjoy!
