I developed this juice after a trip we took to Mexico where I couldn't get enough of the green juice. I've lowered the sugar level on mine but it can easily be sweetened with a touch of honey or by adjusting the coconut water.

Ingredients
1mediumcanary or honeydew melon peeled, insides scooped out, flesh cut into pieces
3mediumFuji apples, cores removed
1largeEnglish cucumber, cut into chunks
1smalllemon, quartered
1smallcontainer or bag of washed spinach
2cupscoconut water
honey optional
Instructions
Add the melon, apples, lemon, and cucumber to a high power blender and blend until a loose juice forms. Add the spinach and blend until incorporated. Add the coconut water and blend on high until uniform.
Pass the mix through a fine-mesh strainer or cheesecloth into a pitcher or large bowl. For a juice with more pulp, use the back of a spoon to push the juice through the strainer. For less pulp, allow the juice to sit and strain slowly. use a spoon to scoop away the pulp that has settled in the strainer from time to time.
Put the juice in a pitcher in the fridge to chill, or serve immediately with ice. Adjust the sweetness by adding more coconut water (if too sweet) or a little honey (if not sweet enough).
