A crunchy, tangy, fresh slaw that goes well with just about any grilled meat or fish. Comes together in 5 minutes with ingredients you probably already have.

Ingredients
15ozshredded carrots, about 1 1/2 bags
1smallshallot, thinly sliced
2tbspfresh dill, chopped
For the dressing
1/4cupVegenaise or mayonnaise
1 1/2tbsplemon juice. fresh squeezed
2-3tspdill pickle brine (Grillo's Pickles are my preferred)
2tbsphoney
ttsalt and pepper
Instructions
In a bowl, whisk together the dressing ingredients. Thinly slice the shallots and chop the dill. Toss the carrots, shallots, dill, and dressing together in a bowl and serve immediately or let chill in the fridge until time to serve. Stays crunchy for up to a couple days.
