Carrot Slaw with Honey & Dill

I’ve shared a few of my 5-minute side dishes in the past – dishes that require no cooking, come together in about 5 minutes with minimal ingredients you probably have on hand. This carrot slaw is another one, and really is quite special.

The flavors in this slaw are so perfect together. A light dressing, fresh herbs, crunchy carrots. Serve it alongside grilled fish, lamb, pork chops or steak. It’s just a great dish to carry through late summer as we all make the most of these fleeting, warm evenings.

5-Minute Side – Carrot Slaw with Honey & Dill

Course: Side Dish
Prep Time: 5 minutes
A crunchy, tangy, fresh slaw that goes well with just about any grilled meat or fish. Comes together in 5 minutes with ingredients you probably already have.

Ingredients:

  • 15 oz shredded carrots, about 1 1/2 bags
  • 1 small shallot, thinly sliced
  • 2 tbsp fresh dill, chopped

For the dressing

  • 1/4 cup Vegenaise or mayonnaise
  • 1 1/2 tbsp lemon juice. fresh squeezed
  • 2-3 tsp dill pickle brine (Grillo's Pickles are my preferred)
  • 2 tbsp honey
  • tt salt and pepper

Directions:

  • In a bowl, whisk together the dressing ingredients. Thinly slice the shallots and chop the dill. Toss the carrots, shallots, dill, and dressing together in a bowl and serve immediately or let chill in the fridge until time to serve. Stays crunchy for up to a couple days.

    I made this yesterday to go with hamburgers and it was really delicious! What did you use to grate your carrots, the thickness looks really nice.

  2. I frequently make our French carrot salad year round which is typically a lemon or a Dijon vinaigrette- Im definitely going to mix it up and try Chris’s version!
