I don't eat breakfast often, and when I do it's usually late morning as the first of two meals I'll have the entire day. So when I have do eat that first meal, I love amping up something simple so it's special, but still easy.
Huge fan of toast, for that reason. Sometimes I'll pair it with a protein drink or smoothie, or just a glass of water and a few quiet minutes. These are three of my favorites on heavy rotation, but I'd love to hear if you have some of your own! And if you give them a try, let me know your thoughts in the comments.
Heat a pan on medium heat, then add 2 tbsp of olive oil and the rosemary. Fry the rosemary for 1 minute, then add the mushrooms and sauté. Season with a pinch each of salt and pepper. Remove from the pan and set aside (discard the rosemary).
Add another tbsp of olive oil to the pan on medium heat. Add your egg, season with salt and pepper, cover, and cook until desired doneness reached.
Drizzle your toast with a little olive oil. Add the fried egg, followed by a few drops of smoked Tobasco, then the mushrooms, finishing with the chili flake.
In a bowl mix together the goat cheese (chevré), cream cheese, and honey until smooth.
Spread the goat cheese mix over your toast. Sprinkle with a few pinches of pink peppercorns, top with arugula, and drizzle with a little more honey to finish.
