3 Delicious Toasts to Try for Breakfast or Brunch

I don't eat breakfast often, and when I do it's usually late morning as the first of two meals I'll have the entire day. So when I have do eat that first meal, I love amping up something simple so it's special, but still easy.

Huge fan of toast, for that reason. Sometimes I'll pair it with a protein drink or smoothie, or just a glass of water and a few quiet minutes. These are three of my favorites on heavy rotation, but I'd love to hear if you have some of your own! And if you give them a try, let me know your thoughts in the comments.

Avocado Toast

Course: Breakfast, Brunch

Ingredients

  • Bread of your choice toasted
  • 1 large avocado mashed
  • 1 lime
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • alfalfa sprouts
  • toasted sesame seeds
  • pea shoots

Instructions

  • Mix together the mashed avocado, 1 tbsp lime juice, salt, pepper, and garlic powder.
  • Spread the avocado on your toast, top with alfalfa sprouts, sesame seeds, pea shoots, and a light squeeze of lime juice if you like to finish.

Spicy Mushroom & Egg Toast

Course: Breakfast, Brunch

Servings: 4

Ingredients

  • Bread of your choice toasted
  • 4 eggs
  • 2 cups mushrooms
  • 3 tbsp olive oil plus a little for drizzling
  • 1-2 sprigs fresh rosemary
  • salt
  • black pepper
  • 5-10 drops smoked Tobasco sauce
  • red chili flakes

Instructions

  • Heat a pan on medium heat, then add 2 tbsp of olive oil and the rosemary. Fry the rosemary for 1 minute, then add the mushrooms and sauté. Season with a pinch each of salt and pepper. Remove from the pan and set aside (discard the rosemary).
  • Add another tbsp of olive oil to the pan on medium heat. Add your egg, season with salt and pepper, cover, and cook until desired doneness reached.
  • Drizzle your toast with a little olive oil. Add the fried egg, followed by a few drops of smoked Tobasco, then the mushrooms, finishing with the chili flake.

Goat Cheese & Honey Toast

Course: Breakfast, Brunch

Servings: 4

Ingredients

  • Bread of your choice toasted
  • 1/4 cup chevré
  • 1/4 cup cream cheese
  • 1 tsp honey plus more for drizzling
  • pink peppercorns
  • arugula

Instructions

  • In a bowl mix together the goat cheese (chevré), cream cheese, and honey until smooth.
  • Spread the goat cheese mix over your toast. Sprinkle with a few pinches of pink peppercorns, top with arugula, and drizzle with a little more honey to finish.

  4. These look great! I eat avocado toast and goat cheese with jam often. I also love smoked salmon with tomatoes, cream cheese, and whatever green things I have in the house.
