Mornings go by fast in our household — at least for me (Chris). Julia is more of an early-morning person, and she likes to get up before the family to work out and get some “me” time in. I’m more of a late-morning person (as are the girls), so we’ll often all converge on the kitchen at the same time before heading out for school drop-offs. It can be chaotic, but I always feel so much better if everyone has some fuel in their system before hitting the road. That’s why I love make-ahead breakfasts.

While convenience is key, I still like to bypass the freezer aisles to skip the preservatives you’ll find in a lot of breakfast foods. That’s why I usually make breakfasts for our family the night before. And the best part? This formula also works well for hosting guests, so I’m not up at the crack of dawn prepping for a long bake time. It’s like a present to future you.

Since Jules is grain-free, gluten-free, and dairy-free, many of these recipes are customized to be allergy-friendly to those with some food restrictions. These recipes are also very high in flavor —with fresh herbs and spices whenever possible. They’re easy to portion out for multiple mornings. My kids love ’em, I love them, and I hope you enjoy serving these at your table as well.

My Favorite Make-Ahead Breakfast Recipes

A scalloped casserole dish with ham & asparagus frittata

Ham & Asparagus Frittata

What I love about this dish is how easy it is to prepare — and it’s packed with protein and flavor. In this frittata, I love to add asparagus and dill for spring, but you could swap the asparagus for broccoli and basil for summer or mushrooms and thyme for fall. Seasonal veggies + ham + eggs.

This recipe is something you can cook for a weekly meal-prep anytime of year with just a quick trip to your grocery store, deli, or local farmers’ market!

Dietary notes: gluten-free, dairy-free, grain-free, nut-free

High-protein breakfast wraps on a plate next to strawberries and a cup of orange juice

High-Protein Breakfast Wraps

You ever notice how kids gravitate to finger foods? When I make these high-protein breakfast wraps, my kids grab ’em! They’re the perfect solution for busy mornings in our house.

The recipe is ideal for weekly meal prep since you can make a large batch of tasty, nutrient-rich burritos that can be stored in the fridge or freezer. With a mix of turkey sausage, eggs, and veggies, these wraps ensure everyone in my family starts the day with a delicious and filling breakfast.

Roasted Vegetable Breakfast Hash | Meal Prep

Roasted Vegetable & Turkey Breakfast Hash

This is a flavorful, fall-inspired combo of turkey sausage, sweet potatoes, zucchini, mushrooms, onion, and fresh herbs including rosemary, sage, and thyme. I make this dish without eggs because they’ve been restricted from Julia’s diet in the past — and sometimes you’re looking for a really great breakfast hash without the eggs (at least I am).

This recipe is perfect for busy people who want a healthy start. Spend just one hour on the weekend to enjoy delicious, ready-to-eat breakfast portions for days, ensuring you never skip a key meal again.

Coconut Mango Breakfast Tarts in a line on a marble cutting board

Coconut Mango Breakfast Tart

You know how sometimes you just want a sweet breakfast? On special occasions, we’ll get donuts for the girls — but they’re always hungry an hour later. If I’m sending them off to school with a little morning “pastry,” I make these coconut mango breakfast tarts. The crust is a simple blend of toasted nuts, dates, and hemp hearts — pressed into the pan and chilled in the freezer. The assembly is quick and easy. Then you just chill it overnight in the fridge! The yogurt and nuts pack the protein and keep us all full.

This is perfect for busy weekdays (or for impressing guests at a stress-free brunch).

Caramelized Onion Frittata - Make ahead breakfast

Caramelized Onion Frittata

Frittata made the list twice! That’s because these are just so easy to make ahead — and you can do it with almost any leftovers you have in the fridge. I love this combo of slow-cooked onions, mushrooms, fresh spinach, and some frozen hash browns to speed up the process.

This recipe allows for easy meal prep up to 48 hours in advance, ensuring a stress-free, gourmet-quality breakfast with minimal effort for your mornings. You can enjoy a high-protein start to your day that’s convenient and impressive, whether you’re on the go or ready to host.

Sausage breakfast patties next to roasted sweet potatoes and a sliced strawberry on a gray plate

Homemade Uncured Maple Breakfast Sausage Patties

I’m a big fan of conviencence, but you simply can’t get pork breakfast sausage at the store that’s as flavorful and “clean” as these Homemade Uncured Maple Breakfast Sausage Patties.

Ditch the store-bought junk for these delicious, easy-to-prep patties, free from nitrates and artificial flavors, ensuring a wholesome start to your day. You’ll spend just minutes on the weekend creating a week’s supply of flavorful, freezer-friendly sausage that tastes so much better than store-bought.

Breakfast Hash with Maple Chicken Sausage

I am definitely into the sheet pan trend, where everything in one dish can just hang out, roasting in the oven without much effort. The main investment is just the time it takes to chop and slice all of the veggies.

This recipe will be on rotation this season in our house, I can assure you. There’s nothing like that sage, rosemary, maple combination—it’s just delicious.

What’s your favorite make-ahead breakfast? I’ll be rotating these the whole school year — keeping our family fueled and full!
