Meal Prep | Uncured Maple Breakfast Sausage Patties

I’m a big fan of convenience. At times, this has meant purchasing a high number of convenience foods to make my days easier, especially in feeding kids. But as Julia’s health needs have shifted, and our daughters have developed various sensitivities, I’ve become accustomed to reading the labels on every food I buy, and my goodness, they put a lot of trash in those foods.

The truth is, the healthiest food is the stuff you make yourself, using primarily whole food ingredients. But that’s not always convenient, and life doesn’t slow down just because you want to be healthy. So it becomes ever more important to meal prep – one day of inconvenience to set yourself up for a week or more.

I came up with these breakfast sausage patties after I realized a) how much I love breakfast sausage and b) how much junk is added to nearly all versions you find in store. This version is uncured (no nitrates or nitrites) and contains no artificial flavors or chemical additives. Just a perfect blend of spices, fresh rosemary, and a touch of pure maple syrup.

I would say it tastes just like store-bought, but I actually think it’s better (and that’s been the general consensus from those who have tried them). So do future you a favor and prep these this week. It’ll make mornings that much simpler and tastier, too.

Homemade Uncured Maple Breakfast Sausage Patties

Course: Breakfast
Servings: 8 servings
This is a great meal prep option to make mornings easy and delicious. No preservatives or weird ingredients – just ground pork and real ingredients.

Ingredients:

  • 3 lbs ground pork
  • 1 1/2 tbsp maple syrup the real stuff
  • 1 tsp fresh rosemary as finely chopped as you can get it

Sausage Seasoning

  • 1 tbsp dried sage powder
  • 1 tbsp salt
  • 1 tsp finely ground black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp chili flake more if desired
  • 1/4 tsp ground clove
  • 1/8 tsp ground nutmeg

Directions:

  • Preheat oven to 375.
  • In a bowl combine all of the ingredients and mix by hand until combined evenly, taking care not to overmix the pork.
  • Form into 25-30 even-sized patties. Place on a ceramic nonstick baking sheet in the oven for 15-20 minutes, when fully cooked through but before significant browning.
  • Store in the fridge (up to 10 days) or freezer (up to 3 months). Heat in microwave or in a pan on the stove before eating.
