I’ve been trying to get creative with how I cook my vegetables, so that I want to eat more vegetables. Hence the shaved asparagus!

Not everyone is a fan of asparagus, but if you haven’t tried them in this noodle-like form you might really like them! I prepared them with some of my favorite asian-inspired flavors to give them that flavor profile I crave so much. This dish would be great as a lunch, a side, or as a noodle alternative that I could eat any day.

When it comes to cooking these recipes, they’re usually born out of curiosity and just having fun with ingredients I love, or want to love! This asparagus is one of those recipes that is just so tasty, with just a few simple ingredients.

Stir-fry Shaved Asparagus

Course: Lunch, Side Dish
This Asian-inspired dish is a great lunch, side dish, or could even be a great substitute for noodles.

Ingredients:

  • 1 bunch asparagus shaved or sliced thinly
  • 2 tbsp olive oil
  • 1 tsp sesame oil
  • 1 tbsp garlic finely chopped
  • 2 tsp ginger grated
  • 1 tbsp coarse mustard
  • 1 tbsp sherry vinegar
  • 1 tbsp soy sauce
  • 2 tbsp veganaise or mayonaise
  • 1 tbsp honey
  • salt to taste
  • 1 tsp sesame seeds toasted

Directions:

  • After shaving the asparagus, soak it in ice water for 5-10 minutes. Remove and let drain for another 5 minutes before cooking.
  • In a bowl, whisk together the ginger, mustard, vinegar, soy sauce, veganaise (mayo), honey, and salt. Adjust seasonings as desired, and set aside.
  • Heat a sauté pan on medium heat. Add the olive oil and sesame oil, then immediately add the asparagus. Toss and sauté for about a minute, then add the garlic and a pinch of salt. Sauté another minute.
  • Remove from the heat and add about half the dressing. Toss to coat, add more dressing as desired. Top with toasted sesame seeds and serve warm.

  1. The mandolin suggestion is an exercise in frustration. I’ve done it for a shaved asparagus pizza (yum) I find success with a vegetable peeler and then when the stalks get too small, julienne them and call it a day. Look for heftier stalks at the store.

  2. Asparagus is one of those veggies I’m familiar with, but it’s a tough pill to swallow. This sounds SO good though, I would totally eat this!!

  3. I want to eat more veggies than the moderate amount I currently do, too! I’m a decent home cook as a homeschooling mom with multiple food sensitivities… lots of practice :) But I find I get very resistant to recipes involving lots of ingredients, steps, or resultant dirty dishes for a proportionally small amount of food – the cost/benefit is just not there for me. This one does seem doable and I have printed it out!

  4. This sounds very yummy. Can’t wait to try it. But honest legit question.m, how do you shave asparagus? What room do you use and is it easy or will I lose a finger or two 🤪 TIA!
