We love a sweet drink in our house, but sometimes I want to mix it up and do something a little more “fresh.” Enter this fruity kiwi cucumber spritzer. It’s tart, it’s crisp, it’s herbaceous. It’s a green juice drink that tastes like a spring tonic in all the best ways.

This mocktail is great for a weekend brunch on the patio, springtime, Easter weekend, Mother’s Day…the list goes on. It’s a flavor that will be perfect all through summer. Sippin’ one of these poolside? Come on! You’ve just been upgraded to a resort!

Plus, this kiwi cucumber spritzer gives you an extra boost of Vitamin C, Vitamin K, and potassium (an electrolyte) to help you feel hydrated. Let me show you how easy it is to make it.

How to Make Kiwi Cucumber Spritzers

This is going to start off controversial, but you don’t need to peel your kiwi. I promise we’re going to filter out any larger skin pieces! Add the kiwi pieces, cucumber pieces and pineapple pieces to a high-powered blender like a Vitamix.

Start blending, using the plunger if needed to get things moving around. Add a little water if you need to. Continue blending on high for 30 seconds until the mixture is smooth.

Pour the fruit mixture into a bowl topped with sieve. Use a ladle spoon to push the liquids through for a minute or so.

In a cocktail shaker, add a cup of ice, a quarter cup of the fruit puree, and a half cup of soda (I used Fever Tree Sparkling Cucumber). Shake carefully a couple of times, popping the lid every shake to release pressure. Gentle shaking doesn’t reduce the fizz too much.

To serve, pour about 6 ounces into a glass, topping it off with a couple more splashes of cucumber soda. Squeeze a lime wedge into the cup and garnish with some fresh mint. Enjoy like you’re on vacation!

Optional Variations

If you want a fruitier, sweeter drink, substitute cucumber soda for Sprite or ginger ale. You could also use a pineapple soda, but if you’re using a sugar-free one like Spindrift, you may want to add some simple syrup.

Mocktail: Kiwi Cucumber Spritzer

Course: Drinks
Servings: 6 servings
Prep Time: 10 minutes

Ingredients:

  • 3 green kiwi, quartered (no need to peel)
  • 1/2 English cucumber, coarsely chopped
  • 1 cup fresh pineapple chunks
  • 6 6.8oz bottles cucumber soda
  • ice
  • lime wedges
  • sprigs of mint

Directions:

  • Add the kiwi, cucumber and pineapple to a blender. Blend until liquified, then pass through a fine-mesh strainer or cheesecloth. Discard the solids.
  • To a martini shaker add a scoop of ice, 1/4 cup of the puree, and a bottle of the cucumber soda. Close up and give one gentle shake, immediately popping the top open to release the pressure. Do this 3-4 times until much of the carbonation is released.
  • Pour from the shaker into a chilled glass, top off with a splash more cucumber soda. Finish with a squeeze of lime and a sprig of mint. Enjoy!
