A strawberry, a blackberry, and an apricot all walk into the bar…that start of a bad joke or the beginning of the most fresh and tasty summer dessert ever? This is a really elevated treat for any summer picnic, party, or snack. These fruit kabobs are light, they’re fun, and they’re definitely out of the ordinary. Kids love ’em. Adults love them. Grilled fruit is going to be the first to go in any gathering.

How to Make Berry-Apricot Fruit Skewers

Start soaking long wooden flat bamboo skewers in some water for at least 5 minutes. Flat skewers are always better than a round skewer, otherwise your food just rotates as you try to flip it. Preheat the grill.

Use a birdbeak pairing knife to remove the stems from the strawberries and halve the apricots.
Gently insert one piece of each fruit onto each skewer. Place all the skewers in a long dish and lightly spray them with avocado oil spray.
Grab your tongs or use your hands to drop the skewers on the grate at a 45-degree angle. Keep them on the hottest part of the grill for 2 to 2.5 minutes per side. You’re not cooking them through to make jam, you’re just warming them up and adding a little char to the exterior.

Pull the skewers off the grill and put them on your serving platter. Drizzle some honey overtop and zest a little bit of lemon with a microplane or fine grater. Squeeze the rest of the lemon juice over the skewers. Lastly, cut some basil leaves into a fine chiffonade and sprinkle them across for that extra summer essence.
My girls gobbled these up after school, and I plan on making them again for Fourth of July and all of our summer barbecues in the backyard.

How to Put a Spin on the Fruit Skewers
Don’t have apricots? Try quartering a peach or nectarine.
Feeling tropical? Toss in cubes of pineapple.
Want to drizzle them with a little balsamic glaze and sprinkle flaky sea salt overtop? You carry on.
You could even put these in or overtop of a mocktail (like my cucumber spritz) to make it look really festive.

Easy Grilled Summer Fruit Skewers
Ingredients:
- 16 medium/large strawberries, washed, stems removed
- 8 apricots, washed, cut in half, pit removed
- 16 large blackberries, washed
- honey
- 1 lemon, zested and juiced
- chopped basil
- avocado oil
Directions:
- If using wood skewers, soak in water for 5 minutes. Skewer one strawberry, one half of an apricot, and one blackberry on each skewer.
- Heat a grill on high. Lightly grease with with avocado oil then grill the skewers for 1-2 minutes on each side on direct heat, until charred.
- Remove from the heat onto a platter, drizzle with honey, lemon zest and lemon juice, and top with chopped fresh basil. Enjoy!
