Grapefruit with Avocado Cream (grain free, vegan dessert)
January 26, 2020
Desserts are not typically my thing. I feel like they're usually a little too heavy and just leave you feeling tired and gross after having eaten a big meal. But I like to have a few light finishers I can whip up quickly for those times where I'm feeling like the meal could use some rounding out.
This dessert is vegan, gluten free, grain free, dairy free, soy free, egg free, peanut free, nightshade free, contains no processed sugars, and only takes 5 ingredients (and as many minutes) to throw together. The only major allergen here is tree nuts (coconut), but I think most of the other bases are covered.
This dessert avoids nearly all major allergens (with the exception of tree nuts), and is super easy to put together. It's really well balanced and the perfect light dessert to end any meal.

Instructions
In a blender, combine the avocado flesh, coconut cream, and 1-1.5 Tbsp honey. Blend until smooth, scraping the sides throughout.
Spoon some of the avocado cream into the bottom of a bowl. Top with 5 slices of grapefruit, drizzle with a couple teaspoons of honey and add a small sprig of fresh mint. Serve immediately.
Your dessert looks so pretty. I can't have grapefruit due to meds and don't like avocado so I'm trying to figure out other ways to spin this. Papaya? And kiwi slices?
Looks delish! One point of clarification is that the presence of honey means this isn’t vegan. Any idea if you think maple syrup would be a good substitute?

Well fam, we made it. We're finally here! The mudroom is officially done. I looked back at the very first post about transforming this space, and it was one year ago, almost to the day. On the one hand, I feel a little deflated that it took us a year. And on the other hand, […]
I love ordering crab cakes out—they're such a treat. But if I want to make crab cakes at home, they need to cater to our food restrictions. That means they have to be delicious AND have no eggs, dairy, wheat, gluten or grains. Well these knock it out of the park, thanks to some secret […]
August is my unofficial start of autumn — I don't believe in separating seasons, or holidays, for that matter. I prefer to squeeze every ounce of joy I feel from the day, whether that is a sunny beach day (which is how we started the month!) or a cool early fall walk with Cricket and […]

This sounds lovely. I'm not a big fan of honey so would probably sprinkle a little bit of finishing salt on it as an alternative.
This looks great! Totally making it!
Could you add some nightshade if you're not allergic? Ha! Loved that little bit of humor :)
Just a pile of green pepper, right on top. ;P
That looks delicious! FYI coconut is not a tree nut. It's a fruit. I'm allergic to tree nuts, but coconut is not considered one.

Do you like oranges? If so you could use orange instead of grapefruit, and mix the coconut cream with a little frozen banana instead of avocado.

Maple syrup has a pretty strong flavor - agave nectar might be a better choice.
I bet this avocado cream would be delicious to eat frozen, like a sorbet.
